I love this dinner so much I could cry.
OH MY GOD guys this is so good.
Crispy golden chicken, brushed with garlic butter (!!) and served on a plate of creamy tomato beans topped with caramelized shallot and fresh basil?! Come on! Come on.
This sounds very *special occasion* but don’t be fooled. Look at my life. Look at my chart. We are very far from fantasy. And yet here we are! Eat restaurant quality food on a Tuesday and LOVE it!
I got this idea from a video I saw from Desert Island Dishes – the crispy chicken/creamy beans concept is so awesome. I just made a few changes using ingredients and methods that are pantry staples in our home. For example, I’m a big fan of crispy air fried chicken for weeknight dinners because = easy!
Please note that the Crispy Garlic Butter Chicken could be a meal itself. My girls (and I) can usually be found standing over the cutting board munching on these deliciously crispy chicken strips.
And then when you spoon it over the creamy shallot beans and throw in all that gorgeous basil?! To go out. It’s beautiful on a restaurant level and way too good.
I also love this dinner because Bjork and I can have something grown-up and exciting while our girls can opt for plain crispy chicken and ketchup with a small tasting dish of creamy beans on the side.
Is this real life? I’m not trying to be weird but I love this meal so much.
