💡 Tip: Personalize your cubes I used three 180g blocks of chocolate for this recipe, but you could stick to two blocks and make a double-decker version to keep them a little smaller, if you like. Not a fan of dark chocolate? Exchange it for Caramilk. This recipe can be used as a base and customized to your taste buds!

To save dishes and time, this Clever tip for melting chocolate in your bag works wonderfully in this recipe. This also gives you a better pour, but you have to be careful that the chocolate doesn’t leak out of the bottom of the packet or seize up. Personally, I prefer the usual method of melting the chocolate in the microwave or in a double boiler.

I used a giant eight-hole silicone ice cube tray for this recipe because three blocks of chocolate was the perfect amount to fill all eight cubes. If you only have a few 6-hole ice cube trays on hand, feel free to fill eight holes with them. You can fill in more holes, if you like, but your rock road pieces will be smaller and might not display that beautiful trio of layers as well.

Even though these rocky road squares are made in an ice cube tray, they are a decent size thanks to all the mix-ins and chocolate. Cut them in half or quarters and you will have perfect treats to share!

Key Ingredients for My Mint Chocolate Rock Squares Recipe

  • Dark, white and milk chocolate: this shocking trio creates a superb three-story effect. You could certainly leave out one of the chocolate blocks and have a double-layered rock route instead, if you prefer.
  • Wavy chocolate cookies: Is it even a rocky road without a few bikkies? The wavy chocolate cookies add a nice dark flavor and texture to the rocky road. They can be replaced with any plain biscuits you have on hand.
  • Spearmint leaves, Aero, Darrel Lea chocolate balls, coconut and mini marshmallows: This selection of treats adds a pop of green color and the perfect amount of texture to the rocky road. They can be exchanged for your favorites.
