Why This 2-Ingredient Protein Jelly Cube Recipe Works So Well
A hit with kids and adults alike, this super easy recipe is as pretty as it is delicious and a super fun way to add some extra protein to your day. It’s a sweet, protein-rich snack that’s easy to make and could just as easily be served as a dessert (just top it with berries). Sign us up for a few seconds! Best of all, it can be made 3 days in advance and you can store the jelly cubes in the refrigerator for up to 4 days.
All you have to do is combine light raspberry jelly with high-protein Greek yogurt and half a cup of boiling water. Just be sure not to over-whip the yogurt and jelly mixture – rapid whisking will create air bubbles in the yogurt. Once you’ve poured the yogurt mixture into the mold, gently tap the bench a few times to level the top. And there you have it! It’s time to settle (but don’t forget).

- High-protein Greek yogurt: this type of yogurt is used in this recipe to make a satisfying snack. High-protein vanilla Greek yogurt can also be used.
- Light Jelly Crystals: I use 2 x 9g packets of light raspberry jelly, but any other jelly flavor can be substituted.
