Finding the Perfect Lamb Recipe for Easter
Every year before Easter, my friends start messaging me asking what lamb recipe they should make for Easter Sunday. I always answer questions: How many people, the day before or the day before, with a high or low budget, do you want rosy pink slices or cut meat? On this basis, I tell them which lamb suits them best.
So this year, I thought it might be useful to turn these little back and forths into a guide so that I can direct you towards your Perfect Easter lamb recipe! I hope you find this useful. 🙂

The leg of lamb is more economical than the shoulder. A 2.5 kg leg serves 8 to 10 people, while a 2.5 kg shoulder serves 4 to 5 people, as the slow cooked shoulder loses more weight. However, the leg is best served freshly prepared. The shoulder can however be prepared in advance, will reheat perfectly 100% and is very Don’t touch.

The first point of order is: do you want something that’s essentially hands-off, or are you happy to be more involved? Think slow cooker roasted leg of lamb, made and forgotten (i.e. effortless) versus a blushing pink oven roasted leg of lamb that needs to be attended to and best served immediately (i.e. more convenient).


2. Do you want something prepared in advance?
It’s hands-off! Now, do you want a hands-off lamb recipe that can be prepared the day before? Or one that you can prepare the same day and serve hot without reheating?
3. DO YOU WANT A PLATED STYLE OR TO SHARE?
Cooking for a large group is much less stressful when you prepare in advance 🙂. Now, do you want a lamb recipe where people help themselves (to share) or one that fits an individual plate?

💘🐑 YOU HAVE BEEN MATCHED! 🐑💘 Here are your perfect lamb recipes:

Racks of lamb ($$$) – Either a rack of lamb breaded with rosemary, or a rack of lamb marinated with herbs and garlic. Don’t make me choose for you! Both are incredible! (Although the crumbled one is a little more practical with the preparation).

Rosemary and Garlic Lamb Cutlets – I know this is a bit of an outlier as it’s cutlets rather than a roast, but I included it because it’s a premium cut for special occasions. This is pretty much the only way I cook lamb cutlets. The better the meat, the simpler the flavors!

Honestly, I feel like you can’t go wrong with any of these lamb recipes, it’s more a matter of knowing which recipe will suit your needs.
As for my first choice? Always the 12-hour lamb shoulder for succulent meat and a rich flavor superior to that of leg, plus it is reheatable. I often roast it in disposable foil trays for easy transport. To reheat, I will do it covered in the oven if the weather permits, otherwise I will put it in the microwave (YES!) If I run out of time to cook, I will make the 3 hour roast version of the shoulder. And if I am Really Short on prep time, I’m going to make the 5-Minute Massaman Shoulder Prep, which I just made for lunch last weekend for this very reason.
When an occasion calls for carving time or I want a large roast to serve 10 people, I’ll make a classic roast leg of lamb with all the trimmings. I love a good leg of lamb!

In memory of the bulldozer
