How I Brought This Fluffy Baileys Mocha Mousse to Life (No Eggs!)

Who knew that a light and airy, rich and creamy mousse could be made with just 4 ingredients (and no eggs!)? Raw eggs scare me – I know they shouldn’t, but if I can choose a recipe that avoids them, then that’s what I do! The inspiration for this recipe came from our now viral 3 ingredient mousseOUR double chocolate mousse cake And mocha mousse cake. They are all made simply with cream, chocolate and a few other mix-ins and are some of the best mousses I have ever tried. These recipes opened my eyes to a whole new world of egg-free mousse.

As simple as it sounds, it took several attempts to perfect this chocolate to cream ratio. The first mousse I tried was made from 180g of chocolate and 300ml of cream. It worked wonderfully, but was just on the richer, thicker side. I reduced the chocolate to 100g and 300ml of cream and it just wasn’t rich enough. SO this final ratio of 180g of chocolate to 400ml of cream is the sweet spot – perfectly rich with a light and frothy texture.

Please note, this recipe requires 2 hours of refrigeration.

💡Tip: give the chocolate time to cool
It is very important to allow the melted chocolate to cool slightly – but not set – before adding the cream to ensure a smooth, glossy mixture.

Key Ingredients for This Fluffy Baileys Mocha Mousse Recipe

  • Dark chocolate: I used Old Gold chocolate and found anything around 40-50% cocoa to be the perfect balance of richness and sweetness. If you’re not a fan of dark chocolate, replace it with a block of milk chocolate (or opt for half!).
  • Thickened cream: make sure your cream is cold as this will help it whip faster. If you find yourself whipping the cream too much, you can always save it with this clever trick.
  • Baileys Irish Cream Liqueur: you can definitely leave this ingredient out and keep it alcohol-free! However, I love the rich, warm notes it gives to the mousse.
  • Freeze-dried instant coffee powder: if you’re not a coffee fan this can be left out completely, but it adds a nice subtle touch of coffee to the foam.
