Everyone’s favorite weekend meal, the Sunday roast, just got better. It’s time to try our tender, juicy (and easy!) air fryer roast beef recipe that has been tested to absolute perfection.

The Sunday roast was a much-loved family ritual in my childhood home, marking the end of the week. This tradition of gathering around the table started with my grandmother, was passed down to my mother and now continues at my house every Sunday. There’s nothing more hearty and comforting than roasted meat served with roasted vegetables and lots of sauce. It’s often said that no one makes a roast like your mother, and yet, even though I sometimes want hers, she only wants mine! It seems that the culinary baton has truly been passed.

Over the past five or more years of air fryer recipe testing, using seven different models, I have rigorously pushed these appliances to provide the best results in many types of dishes. Any recipe that does not pass a taste test or does not offer a superior result compared to traditional cooking methods is not accepted.

Having already achieved amazing results with air frying roast pork And roast chickenI knew what my next roasting challenge had to be. Beef is often the most difficult roast to perfect, so I decided to try an air fryer roast beef…and the results were truly impressive.

Why you’ll love roast beef made in the air fryer

All my air fryer roasting tests have consistently produced super tender and juicy results: 10/10! We absolutely nailed this air fryer roast beef recipe, if we do say so ourselves. Getting perfectly evenly cooked roast beef in the air fryer is a skill we’ve mastered after seven rounds of testing. We experimented with different cuts, including topside and bladeside, ultimately preferring the taste and texture of rump roast.

💡Tip: Bring the beef to room temperature before cooking
Our testing found that it’s essential to bring beef to room temperature before cooking, rather than air frying it straight from the fridge. This simple step ensures that the beef cooks more evenly, resulting in a more tender and juicy texture.

To get that beautiful browning and caramelization, we start the air fryer on a higher heat for the first 15 minutes. We then reduce the heat for the remaining cooking time to ensure even cooking of the roast.

Finally, to create a complete, family-friendly Sunday roast dinner, we added vegetables to the air fryer to cook alongside the beef. What’s not to like? A complete meal in one basket.

What’s in our air fryer roast beef recipe? Key Ingredients

  • Beef rump: the star of the show. Rump is a lean, flavorful cut that roasts well and slices nicely.
  • Olive oil: This adds flavor and helps transfer heat for roasting and even browning.
  • Potatoes: the small, washed potatoes are the perfect size to wrap around the beef in the air fryer basket. They also minimize preparation since there is no need to peel them.
  • Small carrots and asparagus: a “wonder in a basket”, this dish is made with fresh vegetables that can be cooked directly with the main meal by simply adding them to the basket.
  • Thyme leaves: with an earthy, slightly minty aroma, they pair perfectly with beef.
  • Sauce: it is the ideal accompaniment to water down and complement roast beef.
